I can't quite visulise your situation, but if you have various jacks around the office and a whole bunch of unlabeled cables at the switch then I guess you'll have to check which link lights are active on the switch, then disconnect something and see which light goes out.
If you only need to identify the one cable from where the copier was then just check the lights with the copier connected and again with it disconnected.
It gets a bit more dodgy if you have a mix of phone and data services in the same cabling but if it's all Ethernet you can't go far wrong.
