Do you mean like this? Which, by the blue text you have in your post, indicates that you did figure it out.

The quote tag (as well as any other tag) needs to be closed by Open bracket +slash +the tag +close bracket. You can then type your own text (If you click "Edit" -> "Full Edit" on your post above, you'll see what I mean).
