Go to Start > Run and type msconfig in the little window. This opens the System Configuration Utility. Now, select the Startup tab and uncheck those applications you don't want to load at startup. Note, some of those apps. need to load at startup to function properly so be careful. Here's a StartupList you can use to determine those that need to load.

Actually, before you go doing a selective startup you should be going into the settings of those programs and turning off the setting that makes them load on startup. Then, and only then would you want to forcibly stop them in the configuration utility that tecumseh mentions.
